Mediterranean Feta Jucy Lucy’s

I have been freakin’ out over feta cheese lately.  It has such a great kick that it makes my mouth water just thinking about it.  I thought I would share this great grilling season recipe I created that embraces feta, Jucy Lucy’s, and a Mediterranean essence.  The recipe below is for 6 Mediterranean Feta Jucy Lucy’s.  Wondering what the heck a Jucy Lucy is and why it’s spelled so funky?  Read more about it here. 

Burgers:
  • 3.5 lbs of hamburger divided into 12 equal balls
  • Oz crumbled feta cheese
  • 1 T parsley
  • ½ T oregano
  • 1 T basil
  •  ½ large onion
  • spinach
  • 6 hamburger buns

Mediterranean Sauce:
  • 2 T olive oil
  • 2 t balsamic vinegar
  • 4 cloves crushed garlic
  • ½ t mustard
  • ¼ t salt
  • 1/8 t pepper
*Sauce adapted from Steak and Gorgonzola Piadini dressing recipe from Weber’s Way To Grill. 


First get out your feta and hamburger meat.



Divide the meat into 12 equal parts.  I used my kitchen scale to help me along the way, but more power to you if you can eyeball it!  Roll each part into a ball and flatten to create 12 burger halves. 



Top 6 of the burger halves with a generous portion of feta cheese.  Mix the parsley, oregano, and basil and use half of the herb mixture to spread over the feta cheese. 



Take the remaining 6 burger halves and place them on top of the burger with feta.  Pinch down the sides leaving a large hump in the middle for the delicious cheese!



Whisk together the olive oil, vinegar, garlic, mustard, salt, and pepper to create your Mediterranean Sauce. 



Next slice up your onion half and wrap it in tin foil.  Heat the grill and put your burgers and onion packet on.




Turn both the burgers and onions only once to get the perfect finish. 


Top your burger with Mediterranean sauce, onions, and several spinach leaves.


Then enjoy, because this baby is delicious! Yum!
