Fourth of July Celebration Part II: Four Menu Ideas

In our family, you can’t have a celebration without great food.  This Fourth of July I wanted to branch out and try some new recipes mixed with some oldies but goodies.  The great thing about the weekend was that I could prep all of these meals beforehand and execute each meal with little preparation.

For our first meal we had Grilled Huli Huli Chicken, baked beans, and Greek Spinach-Pasta Salad with Feta and Beans. 


The Greek salad was AMAZING!  The hubby usually never likes any cold salads I make but this one was a hit! 


The second meal included Jucy Lucy burgers (yes it is spelled correctly), homemade fresh cut French fries, and tuna salad. 


The Jucy Lucy hamburger originated at Matt’s Bar in Minneapolis, an awesome dive bar with a great atmosphere that always has a line.  This burger is made with the cheese stuffed inside the hamburgers.  This is one of the reasons I love the Minneapolis area.  Super good, but watch out so you don’t get squirted by the hot cheese!


Next we had chicken wings three ways (recipes found here) with celery and blue cheese dipping sauce.  This was a great night time snack after we had stuffed ourselves throughout the day.


The last meal consisted of Persian Chicken Kabobs, Butter Garlic Shrimp Skewers, Ginger and Lime Glazed Corn on the Cob, and Spinach Basil Pesto Salad with Sun Dried Tomatoes. 


For dessert we had s’mores over the campfire and I had root beer floats the adult way made with diet root beer and vanilla vodka.  Hey, it’s not a complete celebration without a little adult beverage!  Hope you guys had a happy fourth of July!
